  • 1 package cheese tortellini (about 16 ounces)
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded Can substitute with low-fat or dairy-free cheese
  • 1/2 cup grated Parmesan cheese
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
Garnish
  • to taste Fresh basil For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large pot of boiling salted water, cook the cheese tortellini according to the package instructions. Once they float to the top, drain and set aside.
  3. In the same bowl with the tortellini, mix together the marinara sauce, garlic powder, and Italian seasoning until every piece is well-coated.
  4. Sprinkle both the mozzarella and Parmesan cheese over the tortellini, gently folding it in.
Baking
  1. Spread the tortellini mixture onto a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.
Serving
  1. Let the tortellini cool slightly, then add fresh basil for garnish before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes or microwave in short bursts.
