  • 2 cups beef broth

  • 1 teaspoon garlic powder

  1. In a large pot, sauté the ground beef over medium heat until it’s browned, about 5-7 minutes. Drain excess grease if necessary.
  2. Stir in the diced onion, carrots, and potatoes. Cook for an additional 3-4 minutes until the vegetables start to soften.
  3. Pour in the beef broth, and sprinkle the garlic powder, salt, and pepper. Let the mixture come to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
  4. Stir in the milk and cheese, mixing until the cheese has melted and the soup is creamy.
  5. Taste the soup and adjust the seasoning as needed.

Notes

For best results, don’t rush the simmering step to allow flavors to integrate beautifully. You can swap ground beef for turkey, chicken, or plant-based options. To avoid clumping when adding cheese, ensure the pot isn’t boiling.
