  • 4 pieces ripe plums, pitted and sliced
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 pieces eggs
  • 1 teaspoon baking powder
  • 1 teaspoon chai spice blend (cinnamon, ginger, cardamom, cloves)
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a round cake pan with butter or a non-stick spray.
  2. In a large mixing bowl, beat together the softened butter and sugar until light and fluffy. This should take about 3-4 minutes.
  3. Crack in the eggs, one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, chai spice blend, and salt.
  5. Gradually add the dry ingredients into the wet mixture. Mix on low speed until just combined.
  6. Pour in the milk and vanilla extract. Gently fold in the sliced plums until evenly distributed in the batter.
  7. Pour the batter into the prepared cake pan and smooth the top.
Baking
  1. Place the cake in the preheated oven and bake for about 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
  3. Serve warm or at room temperature.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for about a week. For freezing, wrap slices in cling film and place in a freezer-safe bag or container; it lasts up to 3 months.
