Preparation
- Preheat your oven to 350°F (175°C). Grease a round cake pan with butter or a non-stick spray.
- In a large mixing bowl, beat together the softened butter and sugar until light and fluffy. This should take about 3-4 minutes.
- Crack in the eggs, one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, chai spice blend, and salt.
- Gradually add the dry ingredients into the wet mixture. Mix on low speed until just combined.
- Pour in the milk and vanilla extract. Gently fold in the sliced plums until evenly distributed in the batter.
- Pour the batter into the prepared cake pan and smooth the top.
Baking
- Place the cake in the preheated oven and bake for about 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
- Serve warm or at room temperature.
Notes
Store in an airtight container at room temperature for up to 3 days, or refrigerate for about a week. For freezing, wrap slices in cling film and place in a freezer-safe bag or container; it lasts up to 3 months.
