Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1/2 cup almond flour Can be substituted with oat flour for nut-free version.
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
Wet Ingredients
  • 1/3 cup maple syrup For a natural sweetener.
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
Main Ingredients
  • 1/2 cup grated carrots Freshly grated for best flavor.
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts Plus more for rolling, if desired.

Method
 

Preparation
  1. Gather all your ingredients, ensuring oats are rolled and carrots are finely grated.
Mix Dry Ingredients
  1. In a large bowl, combine rolled oats, almond flour, cinnamon, and nutmeg. Stir well.
Mix Wet Ingredients
  1. In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
Combine Mixtures
  1. Pour the wet mixture into the dry ingredients and mix well. Gently fold in grated carrots, raisins, and chopped walnuts.
Shape the Balls
  1. Scoop about a tablespoon of the mixture and roll it between your palms to form a ball. Repeat with remaining mixture.
  2. Optionally, roll each ball in extra chopped walnuts for added crunch.
Chill and Store
  1. Place the balls on a tray lined with parchment paper and refrigerate for about 30 minutes to set. Transfer to an airtight container to store in the refrigerator for up to one week.

Notes

For best texture, let balls chill in the fridge for at least 30 minutes after shaping. Can be frozen with parchment paper between layers.
