- In a large mixing bowl, add the oats, cinnamon, nutmeg, and shredded coconut. Mix well until all dry ingredients are evenly combined.
- Add almond butter and honey (or maple syrup) to the dry mixture. Stir until the mixture starts to come together.
- Gently fold in the grated carrots and raisins or walnuts if using. The mixture should be moist but not overly sticky.
- Cover the bowl and place it in the refrigerator for about 10 to 15 minutes to firm up.
- Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
- Enjoy them right away, or store them for later!
Notes
Store in an airtight container in the refrigerator for up to one week. These energy balls can be frozen for up to three months. Let thaw in the fridge or at room temperature for a quick snack.
