Ingredients
  

Dry Ingredients
  • 1 cup oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup shredded coconut
Wet Ingredients
  • 1/2 cup almond butter Can substitute with other nut butters.
  • 1/4 cup honey or maple syrup For a vegan option, use agave nectar.
  • 1/2 cup grated carrots Ensure carrots are finely grated.
Optional Ingredients
  • 1/4 cup raisins or walnuts Optional, add for extra texture.

Method
 

Preparation
  1. In a large mixing bowl, add the oats, cinnamon, nutmeg, and shredded coconut. Mix well until all dry ingredients are evenly combined.
  2. Add almond butter and honey (or maple syrup) to the dry mixture. Stir until the mixture starts to come together.
  3. Gently fold in the grated carrots and raisins or walnuts if using. The mixture should be moist but not overly sticky.
  4. Cover the bowl and place it in the refrigerator for about 10 to 15 minutes to firm up.
  5. Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
  6. Enjoy them right away, or store them for later!

Notes

Store in an airtight container in the refrigerator for up to one week. These energy balls can be frozen for up to three months. Let thaw in the fridge or at room temperature for a quick snack.
