Preparation
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well mixed.
- In a separate bowl, combine the milk, melted butter, and egg. Whisk until smooth.
- Gradually add the wet mixture to the dry ingredients. Stir until a soft dough forms.
- Gently fold in the grated carrots and raisins if you’re using them.
- Lightly flour your work surface and roll the dough into a rectangle, about 12x9 inches.
Assembly
- Spread softened cream cheese evenly over the dough, leaving a small border. Sprinkle with additional cinnamon if desired.
- Starting from the long side, roll the dough tightly into a log shape. Pinch the edges to seal.
- Cut the log into 1-inch thick slices and arrange them in your greased baking dish.
Baking
- Place the rolls in the preheated oven and bake for 25 minutes or until golden brown.
- While the rolls are baking, beat together the remaining cream cheese, powdered sugar, and vanilla extract until smooth.
- Once baked, allow the rolls to cool slightly before generously spreading the cream cheese frosting over the top.
Notes
For best results, check the rolls a few minutes before baking is complete to prevent over-baking. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
