Ingredients
  

Wet Ingredients
  • 2 pieces ripe bananas Make sure they are very ripe for maximum sweetness.
  • 1/2 cup vegetable oil
  • 2 pieces eggs Can substitute with flaxseed egg for a vegan option.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup grated carrots
  • 1 1/2 cups all-purpose flour Can substitute half with whole wheat for added fiber.
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
Optional Add-ins
  • 1/2 cup chopped nuts Optional for added texture.
  • 1/2 cup raisins Optional for sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly or lining it with parchment paper.
  2. Mash the bananas in a large bowl until smooth, retaining some small chunks for texture if desired.
  3. Mix in the grated carrots, sugar, and brown sugar, and combine well.
  4. Add in the vegetable oil, eggs, and vanilla extract. Whisk these ingredients together until smooth.
Mixing
  1. Sift together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a separate bowl, ensuring no lumps remain.
  2. Gradually fold the dry mixture into the wet ingredients just until combined, being careful not to overmix.
  3. If using, fold in chopped nuts and raisins for added flavor and texture.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for about 10 minutes before transferring it to a cooling rack.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze individual slices for up to 3 months. Thaw at room temperature or warm in the microwave to maintain softness.
