Preparation
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly or lining it with parchment paper.
- Mash the bananas in a large bowl until smooth, retaining some small chunks for texture if desired.
- Mix in the grated carrots, sugar, and brown sugar, and combine well.
- Add in the vegetable oil, eggs, and vanilla extract. Whisk these ingredients together until smooth.
Mixing
- Sift together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a separate bowl, ensuring no lumps remain.
- Gradually fold the dry mixture into the wet ingredients just until combined, being careful not to overmix.
- If using, fold in chopped nuts and raisins for added flavor and texture.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a cooling rack.
