  • 1 cup water

Method
 

Preparation
  1. Gather all your ingredients. Ensure your apricots are ripe and washed; then, pit and chop them into chunks.
Making the Syrup
  1. In a medium saucepan, combine sugar and water. Place it over medium heat, stirring occasionally until the sugar dissolves. Bring it to a simmer, then reduce the heat.
Blending
  1. Once the syrup has cooled slightly, add the pitted apricots, ground cardamom, and lemon juice into a blender or food processor. Pour the cooled syrup over the mixture. Blend until smooth!
Straining
  1. If you prefer a smoother texture, strain the blended mixture through a sieve to remove any chunks.
Chilling and Freezing
  1. Pour the sorbet mixture into a shallow dish and place it in the freezer. Stir every 30 minutes for about 3 hours to achieve that perfectly fluffy texture.
Serving
  1. Once the sorbet is frozen and has a delightful consistency, scoop it into bowls and serve. Enjoy immediately or store it for later!

Notes

Store your Cardamom Apricot Sorbet in an airtight container in the freezer for up to 2 weeks. Let it sit at room temperature for 5-10 minutes before scooping for easy serving. Avoid re-freezing once thawed to maintain the best texture and flavor.
