Making the Syrup

Blending
- Once the syrup has cooled slightly, add the pitted apricots, ground cardamom, and lemon juice into a blender or food processor. Pour the cooled syrup over the mixture. Blend until smooth!
Straining
- If you prefer a smoother texture, strain the blended mixture through a sieve to remove any chunks.
Chilling and Freezing
- Pour the sorbet mixture into a shallow dish and place it in the freezer. Stir every 30 minutes for about 3 hours to achieve that perfectly fluffy texture.
