Ingredients

Main Ingredients
  • 4 medium sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 cup pecans, roughly chopped
  • 1 teaspoon ground cinnamon
  • Salt and pepper, to taste

Method

Preparation
  1. Preheat your oven to 425°F (220°C). Roasting at this temperature ensures those caramelized edges everyone loves!
  2. Peel and cube your sweet potatoes into uniform chunks, about 1-inch in size. This helps them cook evenly.
  3. In a large bowl, combine the cubed sweet potatoes with the olive oil, maple syrup, ground cinnamon, salt, and pepper. Toss them until well-coated.
  4. Arrange the sweet potatoes in a single layer on a baking sheet lined with parchment paper. This helps to prevent sticking and ensures easy clean-up!
Cooking
  1. Place the baking sheet in the preheated oven. Roast for 25 minutes before removing it to toss the sweet potatoes gently to ensure even cooking.
  2. After tossing, sprinkle the chopped pecans over the sweet potatoes and return to the oven for another 5-10 minutes, until they are golden-brown and caramelized.
  3. Once done, take them out of the oven and allow them to cool for a few minutes. Serve warm and enjoy this glorious blend of flavors!

Notes

For a different flavor profile, try walnuts or almonds instead of pecans. Keep an eye on the sweet potatoes while roasting; oven times can vary. Avoid overcrowding the baking sheet to ensure proper caramelization.
