Ingredients
  

For the Cookie Dough
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened (or Halal-friendly margarine)
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/2 cup caramel sauce (make sure it's Halal-friendly)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well incorporated.
  4. Gradually add the flour mixture to the butter mixture, stirring until just combined. Be careful not to over-mix!
  5. In another bowl, beat the softened cream cheese until smooth. Mix in half of the caramel sauce until well combined.
Baking
  1. Using a tablespoon, drop cookie dough onto the parchment-lined baking sheet. Make a small indentation in the center of each cookie and fill it with a teaspoon of the cream cheese filling.
  2. Bake for 15-20 minutes or until the cookie edges start to turn golden brown.
  3. Allow the cookies to cool slightly, then drizzle with the remaining caramel sauce to finish the presentation.
  4. Serve warm or store for later.

Notes

Customize your filling with a splash of almond extract or mix in chocolate chips for added sweetness. Remember that cookies continue to cook slightly after being removed from the oven.
