Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well incorporated.
- Gradually add the flour mixture to the butter mixture, stirring until just combined. Be careful not to over-mix!
- In another bowl, beat the softened cream cheese until smooth. Mix in half of the caramel sauce until well combined.
Baking
- Using a tablespoon, drop cookie dough onto the parchment-lined baking sheet. Make a small indentation in the center of each cookie and fill it with a teaspoon of the cream cheese filling.
- Bake for 15-20 minutes or until the cookie edges start to turn golden brown.
- Allow the cookies to cool slightly, then drizzle with the remaining caramel sauce to finish the presentation.
- Serve warm or store for later.
Notes
Customize your filling with a splash of almond extract or mix in chocolate chips for added sweetness. Remember that cookies continue to cook slightly after being removed from the oven.
