  • 1 cup unsalted butter, softened Make sure it's softened but not melted.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped apples (peeled and cored)
  • 1 cup caramel bits or chopped caramels
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  6. Fold in the chopped apples and caramel bits.
  7. Using a cookie scoop or spoon, drop rounded tablespoons onto a lined baking sheet, spacing them apart.
  8. Bake for 10-12 minutes, or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For a nutty flavor, add chopped walnuts or pecans. For best results, avoid overbaking and ensure butter is softened but not melted. Store cookies in an airtight container at room temperature for 4-5 days or freeze for up to 3 months.
