Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup sugar
For the cheesecake layer
  • 2 packages cream cheese, softened (8 oz each) Use Halal-friendly cream cheese.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 units eggs
For the apple topping
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
For the caramel drizzle
  • 1 cup caramel sauce Use Halal-friendly caramel sauce.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs, melted butter, and 1/3 cup sugar until blended.
  3. Press this mixture into the bottom of a greased baking pan evenly and firmly. Bake for about 10 minutes, then allow it to cool a bit.
Make the Cheesecake Layer
  1. In a large mixing bowl, beat the softened cream cheese and 1 cup sugar on medium speed until smooth and creamy.
  2. Add in the vanilla extract and eggs, mixing well after each addition until the mixture is smooth.
Prepare the Apples
  1. In a separate bowl, toss the diced apples with cinnamon to evenly coat them.
Combine and Bake
  1. Pour the cheesecake mixture over the cooled crust, followed by evenly distributing the spiced apples on top.
  2. Drizzle with 1/2 cup of caramel sauce before placing in the oven.
  3. Bake for 30-35 minutes, or until the center is just set and the edges are lightly golden.
Cool and Serve
  1. Allow the bars to cool in the pan, then chill in the refrigerator for several hours or overnight.
  2. Just before serving, drizzle with the remaining caramel sauce.

Notes

Store your Caramel Apple Cheesecake Bars in an airtight container in the refrigerator, where they'll last for up to a week. You could also freeze individual bars for up to 3 months. To reheat, microwave individual slices for about 15-20 seconds.
