Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup granulated sugar
For the cheesecake filling
  • 16 ounces 16 ounces cream cheese, softened Make sure it's at room temperature.
  • 1 cups 1 cup granulated sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 2 large 2 large eggs Make sure they're at room temperature.
  • 2 cups 2 cups diced apples (Granny Smith works well!) Gently fold into the mixture.
For the caramel layer
  • 0.5 cups ½ cup caramel sauce (store-bought or homemade) Drizzle over the top before serving.

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until evenly mixed. Press this mixture into the bottom of a greased 9×13-inch baking dish and bake for 10 minutes. Allow to cool.
  3. In a large bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and vanilla extract, mixing well. Incorporate the eggs one at a time until fully combined.
  4. Gently fold in the diced apples, ensuring they are evenly distributed.
Baking
  1. Pour the cheesecake mixture over the cooled crust and spread it evenly. Bake for 30-35 minutes, or until the edges are slightly set and the center remains jiggly.
Cooling and Serving
  1. Allow the bars to cool at room temperature before refrigerating for at least 4 hours or overnight. Drizzle caramel sauce over the top before slicing into squares.
  2. Serve chilled and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. For longer storage, wrap tightly in plastic wrap and freeze for up to 3 months. Thaw in the refrigerator overnight before serving.
