Preparation
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until evenly mixed. Press this mixture into the bottom of a greased 9×13-inch baking dish and bake for 10 minutes. Allow to cool.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and vanilla extract, mixing well. Incorporate the eggs one at a time until fully combined.
- Gently fold in the diced apples, ensuring they are evenly distributed.
Baking
- Pour the cheesecake mixture over the cooled crust and spread it evenly. Bake for 30-35 minutes, or until the edges are slightly set and the center remains jiggly.
Cooling and Serving
- Allow the bars to cool at room temperature before refrigerating for at least 4 hours or overnight. Drizzle caramel sauce over the top before slicing into squares.

Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. For longer storage, wrap tightly in plastic wrap and freeze for up to 3 months. Thaw in the refrigerator overnight before serving.
