Preparation
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with butter.
- If using fresh cantaloupe, scoop out the flesh and blend until smooth to create about 1 cup of puree.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and cantaloupe puree until fully combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon.
- Gradually fold the dry mixture into the wet ingredients, stirring until there are no dry spots, being careful not to overmix.
- Pour in the milk and mix gently until the batter is smooth.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the muffins cool in the tin for a few minutes before transferring them to a wire rack. Enjoy them warm or at room temperature.
Notes
Store muffins in an airtight container at room temperature for 2-3 days or refrigerate for up to a week. For longer storage, freeze them wrapped in plastic wrap. Thaw at room temperature or warm in the microwave for 20 seconds before serving.
