Preparation
- Preheat your oven to 350°F (175°C).
- Using a blender or food processor, puree the cantaloupe until smooth. Set it aside.
- In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet ingredients, alternating with the cantaloupe puree, and mix until just combined.
- Using a cookie scoop or tablespoon, drop spoonfuls of the cookie dough onto an ungreased baking sheet, ensuring they are spaced about 2 inches apart.
Baking
- Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Glazing
- In a small bowl, combine powdered sugar, lime juice, and zest to create a smooth glaze.
- Once the cookies are cool, drizzle the vanilla lime glaze over the top of each cookie.
