Ingredients
  

For the cookies
  • 1 cup pureed cantaloupe Fresh and ripe for best flavor.
  • 1/2 cup butter, softened Can be substituted with coconut oil for a dairy-free option.
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons lime juice
  • 1 zest of 1 lime

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Using a blender or food processor, puree the cantaloupe until smooth. Set it aside.
  3. In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry mixture to the wet ingredients, alternating with the cantaloupe puree, and mix until just combined.
  7. Using a cookie scoop or tablespoon, drop spoonfuls of the cookie dough onto an ungreased baking sheet, ensuring they are spaced about 2 inches apart.
Baking
  1. Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Glazing
  1. In a small bowl, combine powdered sugar, lime juice, and zest to create a smooth glaze.
  2. Once the cookies are cool, drizzle the vanilla lime glaze over the top of each cookie.

Notes

Store cookies in an airtight container at room temperature for up to 3 days, or freeze with parchment paper between layers to prevent sticking.
