Ingredients
  

Salad Mixture
  • 1 can (14.75-ounce) can of salmon, drained
  • 2-3 tablespoons mayonnaise Adjust to taste
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • ¼ cup celery, finely chopped
  • ¼ cup red onion, finely chopped Can substitute green onions
  • Salt and pepper To taste
For Serving
  • Bread of your choice Whole grain, sourdough, or gluten-free
  • Optional: lettuce or baby spinach For serving

Preparation
  1. Drain the canned salmon and place it in a mixing bowl. Use a fork to flake the salmon into bite-sized pieces, removing any skin or bones if present.
  2. Add the mayonnaise, Dijon mustard, and lemon juice to the bowl with the salmon. Stir everything together until well combined. Adjust the mayonnaise based on your desired creaminess.
  3. Fold in the chopped celery and red onion. Adjust seasoning with salt and pepper.
  4. Taste the mixture and adjust seasoning if necessary. Optionally, mix in some fresh herbs like dill or parsley.
Assembly
  1. Spread the salmon salad onto your choice of bread. Optionally, layer on some lettuce or spinach.

Notes

This sandwich filling gets better after sitting in the fridge for an hour or two, allowing flavors to meld. Avoid over-mixing for a great texture.
