  • 1 small red onion, finely chopped
  • 1 medium red bell pepper, diced
  • 1 unit jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 unit lime, juiced
  • to taste salt and pepper

Method
 

Preparation
  1. Start by draining the canned peaches, then chop them into bite-sized pieces.
  2. Finely chop the red onion, dice the red bell pepper, and mince the jalapeño, removing the seeds for a milder salsa.
Mixing
  1. In a large bowl, combine the chopped peaches, red onion, red bell pepper, and jalapeño.
  2. Toss in the chopped cilantro and squeeze the juice of one fresh lime over the mixture.
  3. Add salt and pepper to taste, stirring everything gently to combine all those vibrant flavors without crushing the peaches.
Chilling
  1. Give your salsa a taste. If it needs a little more zing, feel free to add more lime juice or adjust seasoning to your preference.
  2. For the best flavor, allow the salsa to chill in the refrigerator for about 30 minutes before serving.

Notes

Store your Canned Peach Salsa in an airtight container in the refrigerator, where it will keep fresh for up to five days. If you have leftovers but want to keep them longer, consider freezing the salsa in small portions.
