Ingredients
  

For the Candied Fruit
  • 10-12 pieces skewered strawberries or hawthorn berries Choose firm and fresh fruits.
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup corn syrup Can substitute with honey.
  • as needed cup ice water For hardening.

Method
 

Preparation
  1. Start by cleaning your strawberries or hawthorn berries. Dry them gently with a paper towel and then thread them onto skewers. Make sure to leave enough space at the bottom of each skewer for easy handling.
Making the Sugar Syrup
  1. In a medium-sized saucepan, combine the sugar, water, and corn syrup over medium heat. Stir continuously until the sugar has fully dissolved and the mixture starts to boil.
  2. Use a candy thermometer to monitor the temperature of the syrup. Aim for about 300°F (hard crack stage).
Dipping
  1. Once your syrup reaches the right temperature, quickly remove it from the heat. Carefully dip each skewer of fruit into the syrup, ensuring the fruit is covered entirely. Allow excess syrup to drip off.
Cooling and Hardening
  1. Place the dipped skewers in a bowl filled with ice water. This will help them harden quickly and create a shiny coating. Leave them for about 5 minutes.
Serving
  1. After they’ve cooled, your candied fruit is ready to be enjoyed! Serve them on a platter or use them to decorate cakes and desserts.

Notes

Choose fresh fruits for best results. Work quickly once the syrup’s ready to avoid crystallization.
