  • 1 pound chicken, diced
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 1 cup chopped celery
  • 4 cloves garlic, minced
  • 2 cups okra, sliced
  • 2 cups diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning (ensure it’s alcohol-free)
  • Salt and pepper to taste
  • Cooked rice for serving

Preparation
  1. Start by dicing your chicken and chopping the andouille sausage. Dice your vegetables as listed above.
Cooking
  1. In a large pot over medium heat, add a splash of oil, and once hot, toss in the andouille sausage. Cook until it begins to brown, about 5–7 minutes.
  2. Add in the chopped onions, bell peppers, celery, and minced garlic to the pot. Sauté for another 5–6 minutes until the vegetables soften.
  3. Toss in the diced chicken and stir, cooking until it’s no longer pink, around 5 minutes.
  4. Add the sliced okra, diced tomatoes, chicken broth, and Cajun seasoning. Give it a good stir.
  5. Bring the mixture to a gentle boil, then lower the heat and let it simmer for about 25-30 minutes.
  6. Season with salt and pepper to taste, adjusting based on your preference.
  7. Ladle the Cajun goodness over a bowl of cooked rice and enjoy your hearty meal with family!

Notes

Ingredient substitutions: If andouille sausage isn’t available, lean turkey sausage makes an excellent Halal-friendly alternative. Adjust the Cajun seasoning to suit your taste. Avoid common mistakes: Ensure that your vegetables are chopped uniformly to allow even cooking. Don’t rush the sautéing — it enhances flavor immensely!
