Preparation
- Season the chicken breasts with 2 tablespoons of Cajun seasoning, along with salt and pepper to taste. Ensure the chicken is coated well.
Cooking
- Heat the olive oil in a large skillet over medium-high heat. Once the oil shimmers, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Then, carefully add the chicken broth. Scrape any browned bits from the bottom of the pan for extra flavor.
- Stir in the heavy cream and the additional tablespoon of Cajun seasoning. Allow the sauce to simmer for about 4-5 minutes until it thickens, stirring occasionally.
- Return the chicken to the skillet and coat it in the creamy sauce. Let it simmer for an additional minute to absorb all those bold flavors.
- Garnish with fresh parsley if desired and enjoy your delicious creation!
Notes
For substitutions, if you’re out of Cajun seasoning, you can make your own blend with paprika, cayenne pepper, garlic powder, and onion powder. Always ensure chicken is cooked to an internal temperature of 165°F (75°C). Avoid overcrowding the pan when cooking your chicken for the best results. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. To reheat, thaw overnight in the refrigerator and gently warm it on the stove over low heat, adding a splash of chicken broth or cream.
