  • 2 pieces chicken breasts Ensure uniform thickness for even cooking.
  • 2 tablespoons Cajun seasoning Adjust according to your spice preference.
  • 2 tablespoons olive oil
  • 1 piece bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream Can substitute with coconut milk for a lighter option.
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish For a pop of color.

Method
 

Preparation
  1. Season both sides of the chicken breasts with Cajun seasoning, ensuring they're evenly coated. Allow them to sit for about 10 minutes.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and fully cooked. Remove from skillet.
  2. In the same skillet, add the sliced bell pepper and minced garlic. Sauté for about 3-4 minutes until the bell pepper softens.
  3. Lower the heat and add heavy cream, stirring well. Gradually mix in Parmesan cheese until melted and creamy. Season with salt and pepper.
  4. Return chicken breasts to the skillet and spoon sauce over them. Cook for another 2-3 minutes to meld flavors.
  5. Garnish with freshly chopped parsley before serving.

Notes

For subs, use coconut milk instead of heavy cream, or substitute chicken with shrimp or tofu. Ensure not to overcrowd the skillet for a perfect sear.
