  • 1 medium head cabbage, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium bell pepper, diced (any color)
  • 1 can (14 oz) diced tomatoes, with juices
  • 4 cups vegetable broth (low-sodium)
  • 1-2 teaspoons olive oil
  • Salt and pepper, to taste
  • Optional: fresh herbs for garnish (parsley or basil)

Method
 

Preparation
  1. Wash and chop all vegetables. Chop the cabbage, and dice or slice the onion, garlic, carrots, celery, and bell pepper.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the diced onion and cook for about 3-4 minutes, until it becomes translucent.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add in the chopped cabbage, sliced carrots, chopped celery, and bell pepper. Stir well to combine and cook for another 5 minutes.
  6. Add the diced tomatoes (with their juices) and vegetable broth to the pot, stirring thoroughly to combine.
  7. Season with salt and pepper to taste and bring to a gentle boil.
  8. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes.
  9. Once the vegetables are tender, taste and adjust the seasoning if needed.
  10. Ladle into bowls and garnish with fresh herbs before serving.

Notes

For extra flavor, consider adding spices like cumin or chili flakes. Swap vegetable broth for chicken broth if desired (ensure it remains low-sodium). Store leftovers in an airtight container in the fridge for up to five days or freeze for about three months.
