  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1 large egg (beaten, for egg wash)
  • Coarse sea salt (for sprinkling) to taste

Preparation
  1. In a large bowl, whisk together warm water, yeast, and sugar. Let it sit for about 5 minutes until it becomes frothy.
  2. Stir in the flour and salt until a shaggy dough forms. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
  3. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 30 minutes until doubled in size.
  4. Preheat your oven to 450°F (230°C) and line two baking sheets with parchment paper.
  5. After the dough has risen, punch it down and divide it into small portions. Roll each piece into a rope about 12 inches long, then cut them into bite-sized pieces.
  6. In a large pot, boil about 8 cups of water and add the baking soda. Carefully drop the pretzel bites into the boiling water for about 30 seconds, then remove them with a slotted spoon and place them on the prepared baking sheets.
  7. Brush the tops of the pretzel bites with the beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.
  8. Allow them to cool slightly before serving. Pair with your favorite dipping sauces and enjoy!

For extra flavor, consider adding herbs or spices to the dough. Ensure that the yeast mixture becomes frothy; if not, your yeast may be expired.
