Method
Prepare the dough
- In a large mixing bowl, combine warm water, active dry yeast, and sugar. Let it sit for about 5 minutes until it becomes frothy.
- Add the flour and salt to the yeast mixture. Stir with a wooden spoon until it forms a dough, then knead on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover it with a cloth, and let it rise in a warm place for about 30 minutes, or until it doubles in size.
Bake the pretzels
- Preheat your oven to 425°F (220°C).
- In a large pot, bring 8 cups of water and 1/2 cup of baking soda to a gentle simmer.
- Once the dough has risen, punch it down and divide it into about 8 equal pieces. Roll each piece into a long rope (about 1-inch thick) and cut them into bite-sized pieces.
- Carefully place a few pretzel bites into the simmering water for about 30 seconds. Remove them using a slotted spoon and place them onto a parchment-lined baking sheet.
- Brush each pretzel bite with the beaten egg and sprinkle generously with coarse sea salt.
- Bake the pretzel bites for 10-12 minutes until golden brown. Let them cool slightly, and then serve warm with your favorite dipping sauce.
Notes
These pretzel bites are best enjoyed fresh out of the oven. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
