Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel the sweet potatoes and cut them into uniform 1-inch cubes.
  3. In a large bowl, combine melted butter, maple syrup, ground cinnamon, salt, and black pepper. Stir until well blended.
  4. Toss the sweet potato cubes into the bowl and mix until fully coated.
  5. Line a baking sheet with parchment paper and spread the sweet potatoes in a single layer.
  6. Roast in the preheated oven for 30-40 minutes, tossing halfway through, until golden brown and fork-tender.
  7. Remove from the oven, add fresh herbs for garnish if desired, and serve warm.
