Ingredients
  

Vegetable Base
  • 1 medium butternut squash, peeled and diced Remember to wear gloves when peeling.
  • 1 cup onion, chopped
  • 2 cloves garlic, minced Avoid overcooking as it can turn bitter.
  • 4 cups vegetable broth
Seasonings
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg
Creamy Additions
  • 1/2 cup heavy cream (optional) Can be substituted with coconut milk for a lighter version.
  • Olive oil for drizzling Use for garnishing before serving.

Preparation
  1. Begin by peeling and dicing your butternut squash. Chop the onion and mince the garlic. Try to keep your pieces uniform so they cook evenly.
Cooking
  1. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then, add the minced garlic and cook for another minute, stirring to prevent burning.
  2. Add the diced butternut squash to the pot and stir everything together.
  3. Pour in the vegetable broth, and then season with salt, pepper, and nutmeg. Bring the mixture to a gentle boil, then reduce the heat and let it simmer until the squash is tender, around 15-20 minutes.
  4. Once the squash is tender, carefully transfer the mixture to a blender (or use an immersion blender directly in the pot). Blend until smooth and creamy. If you prefer a creamier texture, add heavy cream during this stage and mix well.
  5. Taste your soup and adjust the seasonings as needed. Serve hot, drizzling a little olive oil on top for added richness.

Notes

This Butternut Squash Soup stores beautifully! Allow to cool before transferring to airtight containers. It lasts in the refrigerator for about 4-5 days or can be frozen for up to 3 months. To reheat, warm gently on the stove and add additional broth or water if too thick.
