Preparation
- Preheat your oven to 400°F (200°C).
- Peel and dice the butternut squash into even, bite-sized pieces.
- Core and dice the apples.
- In a large mixing bowl, toss together the diced squash and apples. Drizzle with olive oil and sprinkle with cinnamon, nutmeg, salt, and pepper. Mix well.
- Transfer the mixture to a lightly greased 9x13 inch baking dish.
Baking
- Bake in the preheated oven for 30-40 minutes, stirring halfway through.
- If using, drizzle maple syrup over the bake in the last 10 minutes of cooking.
- Remove from the oven and let it cool for a few minutes before serving warm.
Notes
Substitutions for maple syrup: honey can be used instead. Ensure uniform dicing of squash for even cooking.
