Main Ingredients
  • 1 medium butternut squash, peeled and diced Ensure it's cut into even, bite-sized pieces.
  • 2 pieces apples, cored and diced Granny Smith for tartness or Honeycrisp for sweetness is recommended.
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • to taste Salt and pepper
  • 1 tablespoon maple syrup (optional) Drizzle in the last 10 minutes of baking.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the butternut squash into even, bite-sized pieces.
  3. Core and dice the apples.
  4. In a large mixing bowl, toss together the diced squash and apples. Drizzle with olive oil and sprinkle with cinnamon, nutmeg, salt, and pepper. Mix well.
  5. Transfer the mixture to a lightly greased 9x13 inch baking dish.
Baking
  1. Bake in the preheated oven for 30-40 minutes, stirring halfway through.
  2. If using, drizzle maple syrup over the bake in the last 10 minutes of cooking.
  3. Remove from the oven and let it cool for a few minutes before serving warm.

Notes

Substitutions for maple syrup: honey can be used instead. Ensure uniform dicing of squash for even cooking.
