Preparation
- Soak your wooden skewers in water for about 30 minutes to ensure they don’t burn on the grill.
- In a mixing bowl, combine the chicken cubes with buffalo sauce. Stir well until the pieces are evenly coated and allow to marinate for at least 15 minutes.
- Thread the marinated chicken onto the soaked skewers, making sure not to overcrowd them for even cooking.
Cooking
- Preheat your grill to medium-high heat and lightly brush the grill grates with olive oil to prevent sticking.
- Place the skewers on the grill and cook for about 10-15 minutes, turning frequently, until the chicken reaches an internal temperature of 165°F and has a nice char.
Serving
- Drizzle with ranch dressing and sprinkle with salt and pepper to taste. Serve hot with your favorite side dishes.
Notes
For a richer flavor, substitute chicken breast for chicken thighs or use plant-based protein for a vegetarian option. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven at 350°F for about 10 minutes.
