Ingredients

For the Skewers
  • 1 lb chicken breast, cut into cubes
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Wooden skewers (soaked in water for 30 minutes)

Method

Preparation
  1. Soak your wooden skewers in water for about 30 minutes to ensure they don’t burn on the grill.
  2. In a mixing bowl, combine the chicken cubes with buffalo sauce. Stir well until the pieces are evenly coated and allow to marinate for at least 15 minutes.
  3. Thread the marinated chicken onto the soaked skewers, making sure not to overcrowd them for even cooking.
Cooking
  1. Preheat your grill to medium-high heat and lightly brush the grill grates with olive oil to prevent sticking.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning frequently, until the chicken reaches an internal temperature of 165°F and has a nice char.
Serving
  1. Drizzle with ranch dressing and sprinkle with salt and pepper to taste. Serve hot with your favorite side dishes.

Notes

For a richer flavor, substitute chicken breast for chicken thighs or use plant-based protein for a vegetarian option. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven at 350°F for about 10 minutes.
