Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the vegetable oil, sugar, eggs, and vanilla extract until well combined.
- In another bowl, sift the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined. Avoid over-mixing!
- If using semi-sweet chocolate chips, fold them into the batter.
- Pour the batter onto the prepared baking sheet, spreading it out evenly into a thin layer.
- Bake in the preheated oven for about 25-30 minutes, or until the edges are firm.
- Once cooled, break the brittle into pieces.
Notes
Store in an airtight container at room temperature for up to a week, or in the freezer for 1-2 months. To restore crunch, reheat at 300°F (150°C) for 5-10 minutes.
