Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the rolled oats, unsweetened cocoa powder, brown sugar, baking powder, and salt until evenly mixed.
- In another bowl, mix the milk and vanilla extract.
- Pour the wet ingredients into the dry mixture, stirring until just combined. Then fold in chocolate chips.
Baking
- Transfer the mixture to a greased baking dish or oven-safe bowl.
- Bake for 25-30 minutes, or until the top is firm to the touch and a toothpick inserted comes out clean.
Serving
- Let it cool slightly before serving. Top with fresh fruits, nut butter, or yogurt.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze portions for up to a month. When reheating, add a splash of milk and microwave for 30 seconds to a minute, stirring halfway through.
