  • 1 cup rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup brown sugar Can substitute with maple syrup for natural sweetness.
  • 1/2 teaspoon baking powder
  • Pinch salt
Wet Ingredients
  • 2 cups milk (or dairy-free alternative)
  • 1 teaspoon vanilla extract
Mix-Ins
  • 1/4 cup chocolate chips Can swap with carob chips for a nut-free option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the rolled oats, unsweetened cocoa powder, brown sugar, baking powder, and salt until evenly mixed.
  3. In another bowl, mix the milk and vanilla extract.
  4. Pour the wet ingredients into the dry mixture, stirring until just combined. Then fold in chocolate chips.
Baking
  1. Transfer the mixture to a greased baking dish or oven-safe bowl.
  2. Bake for 25-30 minutes, or until the top is firm to the touch and a toothpick inserted comes out clean.
Serving
  1. Let it cool slightly before serving. Top with fresh fruits, nut butter, or yogurt.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze portions for up to a month. When reheating, add a splash of milk and microwave for 30 seconds to a minute, stirring halfway through.
