  • 3 tablespoons brown sugar (packed)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cinnamon (optional) For extra warmth

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Peel butternut squash, cut off the ends, slice it in half lengthwise, and remove the seeds.
  3. Chop the squash into 1-inch cubes.
  4. In a large bowl, combine the cubed squash with olive oil, brown sugar, salt, black pepper, and cinnamon (if using). Stir until evenly coated.
  5. Spread the coated squash in a single layer on a parchment-lined baking sheet.
Roasting
  1. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, stirring halfway through, until fork-tender and golden brown.

  1. Remove from the oven and let cool slightly before serving.

Notes
