- Peel butternut squash, cut off the ends, slice it in half lengthwise, and remove the seeds.
- Chop the squash into 1-inch cubes.
- In a large bowl, combine the cubed squash with olive oil, brown sugar, salt, black pepper, and cinnamon (if using). Stir until evenly coated.
- Spread the coated squash in a single layer on a parchment-lined baking sheet.
Roasting
- Place the baking sheet in the preheated oven and roast for about 25-30 minutes, stirring halfway through, until fork-tender and golden brown.
