  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Powdered sugar optional for dusting or glazing

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt until blended.
  3. In a large mixing bowl, cream the softened butter until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Avoid overmixing.
  5. Use a tablespoon to scoop out dough and roll it into balls. Place them on a baking sheet lined with parchment paper, spacing them about two inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown.
  7. Allow the cookies to cool for a few minutes before transferring them to a wire rack. Dust with powdered sugar or drizzle with icing if desired.

Notes

Experiment with flavors by adding vanilla bean or almond extract. Chill the dough for thicker cookies. Store in an airtight container at room temperature for up to a week or in the refrigerator for up to two weeks. Warm in the microwave before serving.
