Ingredients
  

For the marinade
  • 1 cup brown sugar
  • 1 cup pineapple juice
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
For the roast
  • 3-4 lbs beef roast Opt for a well-marbled cut like chuck or brisket.
  • 1 can sliced pineapple To be added around the beef roast.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a medium-sized bowl, mix together the brown sugar, pineapple juice, soy sauce, salt, and pepper.
  3. Place the beef roast into a baking dish and pour the marinade over it, ensuring it’s well coated. Nestle the sliced pineapple around it.
Cooking
  1. Cover the baking dish with foil and roast in the oven for about 3 to 4 hours, or until the beef is fork-tender.
  2. During the last 30 minutes of baking, remove the foil to allow the roast to caramelize. Baste it with the pan juices occasionally.
Serving
  1. Let the roast rest for 10-15 minutes before slicing. Serve with the caramelized pineapple and pan juices drizzled on top.

Notes

For best results, let the roast marinate overnight. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months. Reheat gently to maintain moisture.
