  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream the butter and brown sugar together in a mixing bowl until light and fluffy, about 2-3 minutes.
  3. Add the eggs, one at a time, ensuring each is well incorporated before adding the next. Mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Fold in the sliced peaches gently, ensuring even distribution without overmixing.
  6. Pour the batter into the prepared cake pan and smooth the top.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For best flavor, use fresh peaches. Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week. Freeze for up to a month. Reheat slices in the microwave for 20-30 seconds.
