Preparation
- Preheat the oven to 350°F (175°C).
- Prepare your muffin tin by greasing it lightly or lining it with muffin liners.
- In a large mixing bowl, combine the melted butter and sugars, stirring until well mixed.
- Add the mashed bananas, eggs, and vanilla extract, mixing until you have a slightly lumpy mixture.
- In another bowl, mix the dry ingredients: flour, baking soda, and salt.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Gently fold in the chopped walnuts.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
These muffins can be stored at room temperature in an airtight container for up to 3 days or frozen for up to 3 months. Reheat frozen muffins in the microwave for about 20-30 seconds.
