Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it lightly or lining it with muffin liners.
  3. In a large mixing bowl, combine the melted butter and sugars, stirring until well mixed.
  4. Add the mashed bananas, eggs, and vanilla extract, mixing until you have a slightly lumpy mixture.
  5. In another bowl, mix the dry ingredients: flour, baking soda, and salt.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined.
  7. Gently fold in the chopped walnuts.
  8. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins can be stored at room temperature in an airtight container for up to 3 days or frozen for up to 3 months. Reheat frozen muffins in the microwave for about 20-30 seconds.
