Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas with a fork until smooth, retaining a little texture.
- Add the melted butter to the mashed bananas and mix thoroughly, followed by the beaten egg and vanilla extract.
- In a separate bowl, whisk together the baking soda, salt, and flour.
- Add the dry ingredients to the banana mixture and stir just until everything is combined. Avoid overmixing.
- Pour the batter into a greased loaf pan and smooth the top.
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
Notes
To store, wrap tightly in plastic wrap or aluminum foil and store in the refrigerator for up to a week. For long-term storage, slice and freeze in freezer-safe bags for up to three months.
