  • 3 pieces ripe bananas Ensure the bananas are ripe for maximum sweetness.
  • 1/3 cup melted butter Butter alternatives: can substitute half with unsweetened applesauce.
  • 1 large egg, beaten Can substitute with flaxseed meal mixed with water for a vegan option.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth, retaining a little texture.
  3. Add the melted butter to the mashed bananas and mix thoroughly, followed by the beaten egg and vanilla extract.
  4. In a separate bowl, whisk together the baking soda, salt, and flour.
  5. Add the dry ingredients to the banana mixture and stir just until everything is combined. Avoid overmixing.
  6. Pour the batter into a greased loaf pan and smooth the top.
  7. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.

Notes

To store, wrap tightly in plastic wrap or aluminum foil and store in the refrigerator for up to a week. For long-term storage, slice and freeze in freezer-safe bags for up to three months.
