Preparation
- Melt the unsalted butter in a light-colored saucepan over medium heat, stirring frequently until golden brown and nutty-smelling, about 5 to 7 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the brown sugar and granulated sugar until combined.
- Stir in the cooled brown butter, pumpkin puree, egg, and vanilla extract until fully integrated.
- In another bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined, being careful not to overmix.
- Fold in the chocolate chips until evenly distributed.
Baking
- Preheat your oven to 350°F (175°C).
- Using a cookie scoop or tablespoon, drop rounded portions of dough onto a parchment-lined baking sheet, about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
Notes
For chewier cookies, consider chilling the dough for about 30 minutes before baking. Store in an airtight container for up to a week or freeze the dough.
