Ingredients
  

For the cookie bars
  • 1 cup unsalted butter Melted and browned
  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup chopped pistachios

Method
 

Preheat Your Oven
  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by lining it with parchment paper.
Brown the Butter
  1. In a medium saucepan, melt the unsalted butter over medium heat, stirring constantly until it foams and turns a golden brown, about 5-7 minutes.
  2. Remove from heat and let it cool slightly.
Mix Sugars and Eggs
  1. In a large mixing bowl, combine the brown sugar and granulated sugar, then pour in the browned butter, followed by the eggs and vanilla extract. Mix well until smooth.
Combine Dry Ingredients
  1. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually incorporate this mixture into the wet ingredients, stirring until just combined.
Add Chocolate and Pistachios
  1. Fold in the chocolate chips and chopped pistachios, ensuring they’re evenly distributed throughout the batter.
Bake
  1. Pour the batter into your prepared baking dish, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cool and Cut
  1. Allow the cookie bars to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack, then cut into squares and enjoy!

Notes

Store in an airtight container at room temperature for up to a week or refrigerate for about 10 days. They freeze beautifully for up to three months.
