  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup cooked rice (white or brown)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken for extra flavor)
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • Salt and pepper, to taste
  • ½ cup bread crumbs (for a crunchy topping) Optional

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine chicken, broccoli, cooked rice, soup, milk, half the cheese, and season with salt and pepper. Mix until well combined.
  3. Grease a 9x13-inch baking dish, then pour the mixture in. Spread it out evenly.
  4. Sprinkle the remaining cheddar cheese on top. For added crunch, top with bread crumbs.
Baking
  1. Bake for 25–30 minutes, or until the top is golden and bubbly.
  2. Let the casserole rest for a few minutes before serving.

Notes

Make ahead by assembling up to a day ahead and refrigerate. You can also swap broccoli for cauliflower, spinach, or peas. Try mixing in mozzarella, Colby Jack, or pepper jack for extra flavor.
