  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds total
  • 1 cup fresh broccoli, finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
Make the Filling
  1. In a medium-sized bowl, mix together the chopped broccoli, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper until well combined.
Prepare the Chicken
  1. Place the chicken breasts on a cutting board. Using a sharp knife, carefully slice each chicken breast horizontally to create a pocket, being sure not to cut all the way through.
Stuff the Chicken
  1. Generously fill each chicken breast pocket with the broccoli and cheese mixture.
Secure the Filling
  1. Use toothpicks to secure the openings of the chicken breasts to ensure the filling doesn’t spill out while cooking.
Sear the Chicken
  1. In an oven-safe skillet over medium heat, add olive oil. Once it’s warm, gently place the stuffed chicken breasts into the skillet and sear them for about 3-4 minutes on each side until browned.
Bake to Perfection
  1. Transfer the skillet to the preheated oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Notes

You can use different types of cheese for a unique twist—mozzarella or pepper jack can be delightful alternatives. Make sure to secure the filling pockets tightly with toothpicks to keep everything contained. To store, keep leftovers in an airtight container in the refrigerator for up to 3-4 days.
