  • 1 cup broccoli florets, cooked and chopped Use fresh or frozen broccoli
  • 1 cup shredded cheese (cheddar or mozzarella) Choose your preferred type of cheese
  • 1/2 cup cream cheese, softened Ensure cream cheese is at room temperature for easy mixing
  • 1/2 teaspoon garlic powder

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by slicing them horizontally to create pockets, ensuring not to cut all the way through.
  3. In a large bowl, combine the cooked broccoli, cream cheese, shredded cheese, garlic powder, salt, and pepper, mixing until well combined.
  4. Generously fill each chicken pocket with the broccoli and cheese mixture, packing it well.
Cooking
  1. In a skillet over medium heat, add the olive oil and sear the stuffed chicken breasts seam-side down for 3-4 minutes until golden brown.
  2. Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  3. Let the chicken rest for a few minutes before serving to allow juices to redistribute.

Notes

Store leftovers in the refrigerator for up to 3 days. Freeze unbaked stuffed chicken for up to 3 months. Thaw overnight before baking.
