Preparation
- Preheat your oven to 375°F (190°C).
- Prepare the chicken by slicing them horizontally to create pockets, ensuring not to cut all the way through.
- In a large bowl, combine the cooked broccoli, cream cheese, shredded cheese, garlic powder, salt, and pepper, mixing until well combined.
- Generously fill each chicken pocket with the broccoli and cheese mixture, packing it well.
Cooking
- In a skillet over medium heat, add the olive oil and sear the stuffed chicken breasts seam-side down for 3-4 minutes until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before serving to allow juices to redistribute.
Notes
Store leftovers in the refrigerator for up to 3 days. Freeze unbaked stuffed chicken for up to 3 months. Thaw overnight before baking.
