- Take the chicken breasts and make a pocket in each one by cutting horizontally, being careful not to cut all the way through. Season with salt and pepper.
- In a mixing bowl, combine the chopped broccoli, shredded cheese, cream cheese, and garlic powder. Mix well until everything is evenly incorporated.
- Spoon the cheesy broccoli mixture into each chicken pocket, filling them generously.
Baking
- Place the stuffed chicken breasts in a greased baking dish. Drizzle a bit of olive oil on top and season with a pinch of salt and pepper.
- Bake for 30-35 minutes or until the chicken is fully cooked and the cheese is bubbly.
Serving
- Remove from the oven, let rest for a few minutes, slice, and serve hot.
