  • 1 cup broccoli florets (cooked and chopped)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cream cheese Softened
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Take the chicken breasts and make a pocket in each one by cutting horizontally, being careful not to cut all the way through. Season with salt and pepper.
  3. In a mixing bowl, combine the chopped broccoli, shredded cheese, cream cheese, and garlic powder. Mix well until everything is evenly incorporated.
  4. Spoon the cheesy broccoli mixture into each chicken pocket, filling them generously.
Baking
  1. Place the stuffed chicken breasts in a greased baking dish. Drizzle a bit of olive oil on top and season with a pinch of salt and pepper.
  2. Bake for 30-35 minutes or until the chicken is fully cooked and the cheese is bubbly.
Serving
  1. Remove from the oven, let rest for a few minutes, slice, and serve hot.

Notes

Feel free to swap out broccoli for other vegetables such as spinach or bell peppers, or experiment with different types of cheese for a unique flavor profile.
