  • 4 pieces chicken breasts (boneless and skinless)
  • 1 piece onion (chopped)
  • 2 pieces carrots (sliced)
  • 2 pieces celery stalks (diced)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper (to taste)
  • 1 cup frozen peas
  • 1 cup shredded cheese (optional, for topping)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  3. Add the sliced carrots and diced celery. Cook for another 5-7 minutes until they start to soften.
  4. Season the chicken breasts with salt, pepper, thyme, and rosemary. Add them to the skillet and sear on both sides until lightly browned.
  5. Pour in the chicken broth and heavy cream. Bring to a gentle simmer and then stir in the frozen peas.
Baking
  1. Transfer the mixture to a baking dish and cover it with foil.
  2. Bake in the preheated oven for 50 minutes.
  3. Remove the foil, sprinkle cheese on top if desired, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  4. Let it cool for a few minutes before serving, and enjoy!

Notes

For best results, use fresh herbs. Substitute chicken thighs for darker meat. Watch the baking time to prevent dry chicken. Add garlic or mushrooms for extra flavor. Don't skip the cheesy topping for added delight.
