Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the chopped spinach, dried cranberries, cream cheese, salt, and pepper. Mix until well-combined and set aside.
  3. Carefully cut a pocket in each chicken breast by slicing horizontally without cutting all the way through.
  4. Place a slice of brie cheese into each pocket, followed by a generous spoonful of the spinach and cranberry filling.
  5. Use toothpicks to secure the openings of the chicken breasts, ensuring the filling stays inside during cooking.
Cooking
  1. In an oven-safe skillet, heat olive oil over medium heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  2. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
