Ingredients

  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter Plus more for frying
Optional Mix-ins
  • chocolate chips, blueberries, or chopped bananas For added flavor and fun

Method
 

Preparation
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk the milk and egg until well combined.
  3. Pour the wet ingredients into the dry mixture, along with the melted butter, and stir until just combined.
  4. If desired, fold in your chosen mix-ins, like chocolate chips or blueberries.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with melted butter.
  2. Using a small cookie scoop or tablespoon, drop the batter onto the skillet, leaving space between each popper.
  3. Cook for about 1-2 minutes or until bubbles form on the surface.
  4. Carefully flip each popper and cook for an additional minute, until both sides are golden brown.
  5. Transfer the cooked poppers to a plate and keep warm while you repeat the process with the remaining batter.
Serving
  1. Stack the poppers high and serve with your favorite toppings, such as maple syrup, whipped cream, or fresh fruit.

Notes

Top Tips: Don't overmix the batter, adjust heat if needed, and experiment with mix-ins for variety. Leftovers should be stored in an airtight container in the refrigerator for up to 3 days.
