  • 1 lb halal breakfast sausage Can substitute with ground turkey or chicken sausage.
  • 1 cup ricotta cheese For creaminess.
  • 2 cups shredded mozzarella cheese For a stretchy, gooey topping.
  • 1 cup shredded cheddar cheese Adds flavor to the dish.
  • 4 pieces eggs Provides structure to the layers.
  • 1 cup milk Use whole or low-fat milk.
  • 1/2 cup diced bell pepper Mixed colors can enhance visual appeal.
  • 1/2 cup diced onion Adds flavor.
  • to taste Salt and pepper Adjust according to preference.
  • 1/2 teaspoon garlic powder Enhances flavors within the dish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Boil lasagna noodles according to the package instructions until they are al dente, then drain and set aside.
  3. In a skillet over medium heat, cook the halal breakfast sausage until browned. Drain excess grease if needed and set aside.
  4. In a mixing bowl, whisk together the eggs, milk, garlic powder, Italian seasoning, salt, and pepper until well combined.
Assembly
  1. In a greased 9x13-inch baking dish, start with a layer of noodles. Follow that with a scoop of the egg mixture, a layer of sausage, and dollops of ricotta cheese.
  2. Sprinkle mozzarella and cheddar cheeses over this layer.
  3. Continue layering with noodles, egg mixture, sausage, ricotta, mozzarella, and cheddar until all ingredients are used, ending with a generous layer of cheese on top.
Baking
  1. Cover the dish with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  3. Once out of the oven, allow it to rest for about 10 minutes before slicing.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You can freeze portions for up to 3 months. Reheat in the oven at 350°F (175°C) for about 20 minutes, covering with foil.
