Avocado Mixture
  • 2 pieces ripe avocados Choose ripe avocados for the best flavor and texture.
  • 1 whole lime Fresh lime juice enhances flavor and color.
  • to taste salt
  • 1 whole tomato (diced)
  • 1 small red onion (diced)
  • 1 whole jalapeño (optional, finely chopped) Add for extra spice, or omit for milder flavor.
Base
  • 4 slices whole-grain bread Can substitute with gluten-free bread if desired.
Topping (Optional)
  • 2 whole eggs Scramble, poach, or fry to your liking.

Method
 

Preparation
  1. Slice the ripe avocados in half and remove the pits. Using a spoon, scoop out the flesh into a mixing bowl.
  2. With a fork, mash the avocados to your desired level of creaminess.
  3. Squeeze the fresh lime juice onto the mashed avocados and add salt to taste.
  4. Gently fold in the diced tomatoes, red onions, and jalapeños (if using).
Toast the Bread
  1. Toast the whole-grain bread slices until they reach your desired level of toastiness.
  2. If you’re adding eggs, scramble, poach, or fry them to your liking during the last few minutes of bread toasting.
Assemble
  1. Spread a generous amount of the guacamole mixture onto each slice of toast.
  2. Top with the cooked eggs if you chose to include them.
