Main Ingredients
  • 4 large large tortillas Soft tortillas are preferred.
  • 6 pieces eggs Fresh eggs for scrambling.
  • 1 cup diced bell peppers Variety of colors for a vibrant dish.
  • 1 cup cooked Halal breakfast sausage Ensure the sausage is Halal-certified.
  • 1 cup shredded cheese (cheddar or Mexican blend) Melted cheese tops the dish.
  • 1/2 cup salsa Use your favorite salsa.
  • 1/4 cup chopped green onions For garnish.
  • to taste none Salt and pepper To season the eggs.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, crack the eggs and whisk them with salt and pepper to taste.
  3. Heat a non-stick skillet over medium heat. Add the diced bell peppers and sauté for about 3-4 minutes until they are tender.
  4. Pour in the scrambled eggs and cook for 4-5 minutes, stirring occasionally until the eggs are fully cooked.
  5. Take a tortilla and spoon a generous amount of the egg mixture onto the center. Add some cooked Halal breakfast sausage, sprinkle cheese on top, then roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat for all tortillas.
  6. Once all tortillas are in the dish, pour salsa over them and sprinkle additional cheese on top.
  7. Place the dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and sprinkle chopped green onions on top for added freshness. Serve warm and enjoy!

Notes

Storage: Breakfast Enchiladas can be stored in the refrigerator for up to 3 days in an airtight container or frozen for longer storage. When reheating from frozen, thaw overnight and reheat in a preheated oven.
