Ingredients
  

For the Burritos
  • 4 large large flour tortillas
  • 6 large large eggs, scrambled
  • 1 cup shredded Halal chicken sausage or beef sausage, cooked Cooked sausage is preferred
  • 1 cup shredded cheese (your choice) Use your favorite cheese
  • 0.5 cup diced bell peppers
  • 0.5 cup diced onions
  • 0.5 cup salsa (for serving)

Method
 

Preparation
  1. Start by scrambling the eggs in a bowl and seasoning them with salt and pepper. Set aside.
Cooking Sausage
  1. In a skillet, cook the Halal sausage over medium heat until browned, about 5-7 minutes.
Mix Ingredients
  1. Add the diced bell peppers and onions to the skillet and sauté until slightly tender, around 3-4 minutes. Fold in the scrambled eggs until well mixed.
Assemble the Burritos
  1. Lay a tortilla on a flat surface. Place a portion of the egg mixture in the center, followed by a sprinkle of cheese. Roll the tortilla tightly, folding the sides in as you roll.
Air Fry
  1. Preheat your air fryer to 400°F (200°C). Place the burritos seam-side down in the basket and air fry for 8-10 minutes or until the tortillas are golden and crispy, flipping halfway through.
Serve
  1. Remove the burritos from the air fryer and let them cool for a minute. Serve with salsa on the side.

Notes

Feel free to substitute protein or keep it vegetarian with beans or tofu. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. For reheating, use an air fryer at 350°F (175°C) for 5-7 minutes.
