  • 4 large flour tortillas
  • 6 large eggs Whisked and seasoned with salt and pepper
  • 1/2 cup shredded cheese Cheddar or your choice
  • 1/2 cup cooked and crumbled halal sausage or turkey bacon
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped onions
  • Salt and pepper To taste
  • Salsa Optional, for serving

Preparation
  1. Start by gathering all your ingredients. Crack the eggs into a bowl, whisk them together, and season with salt and pepper. Set aside.
Cooking Fillings
  1. In a non-stick skillet, over medium heat, sauté the chopped onions and bell peppers until they are soft, about 4-5 minutes. If using halal sausage or turkey bacon, add it to the skillet to warm through.
  2. Pour in the whisked eggs. Stir gently, allowing the eggs to cook evenly. Continue to stir until the eggs are just set but still soft.
Assembling Burritos
  1. Warm the tortillas in a separate skillet or microwave to make them pliable. Once warmed, layer the egg mixture, cheese, and any additional toppings onto each tortilla.
  2. Starting from one end, fold the tortilla over the filling, then fold in the sides and roll it up tightly.
Serving
  1. Slice the burritos in half, arrange them on a plate, and serve with salsa on the side for dipping. Enjoy your delicious creation!

Notes

You can mix and match ingredients based on your preference. Store any extra breakfast burritos in an airtight container in the refrigerator for up to 3 days. To freeze, wrap them tightly in foil and store in a zip-top bag for up to 2 months.
